Ward Soup Cook Off

10/25/2008 Our ward had a Halloween Party on Saturday. For dinner people brought soup and certain people judged the soup and gave awards in categories like, best over all, cheesiest, and chunkiest. My soup got best overall!!!:)

Here is a picture of the soup..... this picture doesn't really make the soup look that great but it really is a good soup.

Potato Soup

- 4-5 Large Potatoes
- 4 Cups Chicken Broth
- 1 Can Hatch Green Chilies
- 1/2 Cup Shredded Cheese Cheddar
- 1-2 Cloves of Garlic
- Cilantro
- Milk

Slice and boil the potatoes until they start to get tender, drain them, put 2/3 of the potatoes in the blender with 4 cups of chicken broth and 1-2 garlic cloves (depending on how much garlic you want) blend until smooth but not more. Transfer back to the pot that has the rest of the potatoes. Add milk to it until you have the thickness, consistency you want. Take a fistful of cilantro, rinse it and chop it. Add salt and pepper to taste and 1 can of green chilies. Simmer for about 20 minutes and then add 1/2 cup shredded cheese.

Enjoy--
